Cocktail Hour: Raspberry, Thyme, and Gin Cocktail

Thyme Raspberry Gin 1

My good friend always jokes that I love a salad in my cocktails. If I’m out and there’s a drink on the menu with thyme, rosemary, basil or mint in the description, you can almost guarantee that’s what I’ll be ordering. Not only does this pretty pink cocktail have thyme but, it has thyme muddled with fresh raspberries. Raspberries and Thyme

Ingredients {adapted from KeyIngredient}

Cocktail

1 teaspoon fresh thyme leaves
6-8 fresh raspberries
juice of 1/2 lemon
1 – 2 teaspoons simple syrup (ingredients & directions below), to taste
1 shot gin
2 shots club soda

Simple Syrup

2 parts sugar
1 part water

Directions

Cocktail

Muddle the thyme and raspberries then add the rest of the ingredient. Serve with a lot of ice (preferably crushed).

Simple Syrup

Bring water to a boil and then stir in the sugar. Once the sugar is dissolved, remove from heat and allow to cool completely. (You can add 1 tsp of vodka to prolong the shelf life of the simple syrup.)
