Fat Tuesday is still a few days away, but we’re smack in the middle of carnival season, my friends. If you’re looking to get in on the celebrating, look no further than this fabulous King’s Cup. It is sugary sweet and super festive. Laissez les bon temps rouler, y’all!
King’s Cup (from Emeril’s Delmonico)
Ingredients
1 ¼ ounces vanilla-infused vodka
½ ounce pineapple juice
½ ounce coconut simple syrup (recipe below)
½ ounce fresh lime juice
multicolored sanding sugar (purple, green and gold), for sanding rim of glass
champagne, to top off drink
Directions
Combine the vodka, pineapple juice, simple syrup, and lime juice in a cocktail shaker and shake or stir to combine. Moisten the rim of a Collins glass and coat with the colored sugar. Fill with ice. Pour the cocktail mixture into the glass and top off with champagne.
Coconut Simple Syrup (from Bobby Flay)
Ingredients
1 ½ cup water
1 tablespoon granulated sugar
¾ cup sweetened, flake coconut
Directions
Combine water and sugar in a saucepan and bring it to a boil. Stir in the coconut, remove from heat and let sit for 30 minutes. Strain the liquid into a clean saucepan. Bring to a boil and cook until the mixture is slightly reduced, about 5 minutes. Let cool.
Colored Sanding Sugar
Ingredients
¼ cup sugar, divided into three plastic baggies
food coloring as desired
Directions
Combine sugar and a few drops of food coloring in a plastic baggie. Repeat in separate baggies for additional colors. Spread colors separately onto baking sheet and bake in a 350F oven for 10 minutes.
